Grease Trap, What is it? Grease traps and grease interceptors are containers or receptacles located between the restaurant or food service drain lines and the municipal sewer lines. The Grease trap allows for the separation and collection of fats, oils and grease (FOG) and other organic materials from the wastewater, preventing the FOG’s from entering the municipal sewer system.
